Homemade Halloween Candy

HOME COOKING NEW YORK
In this class, you'll learn to make Pumpkin-Spiced Chocolate Truffles and Cereal, Pretzel or Nut Brittle! Please prepare the following ingredients and equipment prior to joining the class:

INGREDIENTS
  • 1 pound bittersweet chocolate, 60-80% cacao (not milk chocolate)
  • 1/2 pound chocolate of choice for coating truffles (any kind: milk, white, dark)
  • 2 cups granulated sugar
  • 2 sticks unsalted butter
  • 1 cup heavy cream or 1 can full-fat coconut milk (for dairy-free truffles)
  • 1 cup light corn syrup (the clear kind, but not “lite”)
  • 1/2 teaspoon baking soda
  • Kosher or flaky sea salt 
  • 1 teaspoon vanilla or other preferred extract
  • Brittle Options (choose 1 or you can do a combo): 1 pound mixed roasted nuts, 2 cups non-flaky cereal like Cheerios, OR 2 cups mini pretzels
  • Truffle Coating Options (choose 1 or you can do a combo): cocoa powder, colored sugars, sprinkles, finely chopped nuts, shredded coconut, edible googly eyes, edible Halloween-themed cookie decorations, etc. 
  • Truffle Spice Options: 1 teaspoon pumpkin pie spice or apple pie spice if you're not a fan of pumpkin
  • Optional (for spiced brittle): 1 teaspoon cayenne, smoked paprika or chili powder

EQUIPMENT
  • 2 large, rimmed sheet pans, preferably non-stick
  • 1 nonstick baking mat (called “Silpat”) or aluminum foil
  • Large, heavy-bottomed saucepan 
  • Medium saucepan
  • Silicone spatula or wooden spoon
  • Cooking spray or neutral vegetable oil, such as avocado, canola, or grapeseed
  • Assorted mixing bowls (metal or glass; no plastic) 
  • Tiny ice cream scoop, melon baller, or tablespoon measure, for truffles
