Making Bagels From Scratch

HOME COOKING NEW YORK
INGREDIENTS​:
  • 5 teaspoons active dry yeast (2 packets)
  • 6 cups high-gluten flour (bread flour) or all-purpose flour (25 ounces or 720 grams)
  • 2 tablespoons honey
  • 3 tablespoons sugar
  • 4 teaspoons kosher salt
  • 1/4 cup baking soda 
  • Toppings/filling options: Sesame seeds, poppy seeds, raisins, cinnamon, turmeric, "Everything Bagel" sprinkle
 
EQUIPMENT: 
  • Measuring cups and spoons
  • Liquid measuring cup
  • Fork or whisk
  • Large, wide pot (for boiling bagels)
  • Slotted spoon
  • Large mixing bowl
  • 2 baking sheets or cookie sheets 
  • Cooling rack
  • Silpat baking sheets, parchment paper, cooking spray or neutral vegetable oil
  • Scale (not necessary, but nice if you have one)

Classes cover the basics (How to Cook Fish, How to Cook Chicken, Knife Skills), more cuisine-specific classes (Introduction to Korean/ Thai/ Indian/ Spanish/ Middle Eastern) and culinary workshops (Fresh Pasta, Cheesemaking, Vietnamese Pho, Chinese Dumplings).
